Easy Focaccia Bread

  • 1 envelope yeast (2 ¼ tsp)
  • 1 cup minus 1 Tbsp. water (105-115°F)
  • 2 cups flour
  • 2 Tbsp. whole wheat flour
  • 1 tsp. salt
  • 1 Tbsp. Italian seasoning (or any herb mix)

Optional toppings: Sliced tomatoes or halved cherry tomatoes and grated parmesan cheese or sliced peaches with red onion and mozzarella.

Measure water, add yeast. Stir. Let sit 10 min. (You can add in a pinch of sugar to help the yeast get started). Mix dry ingredients in the bowl of a food processor or mixer. Pour water in with machine running and mix until ball has formed. Put in an oiled bowl. Let rise 1 hour until doubled in size.

Easy focaccia bread before baking

Preheat oven to 425°F. Grease a 10 inch tart pan. Press dough into pan with finger tips to form dimples. (If you don’t have a tart pan, free form it on a baking stone or baking sheet). Brush with olive oil and add toppings of choice or sprinkle with sea salt and Italian seasoning. Bake 15-20 min. until brown.
