Vegan Taco Filling

Here is the recipe for my vegan taco filling. I cook everything together in an Instant Pot, but if someone doesn’t have that, they could just cook the items normally and then mix them together at the end.

I invented this recipe because I love hearty protein with flavor and wanted to be able to eat healthy with my vegan and gluten free friends. It is a smash hit everywhere I take it!

In an InstaPot mix the following:

  • 4 Diced medium yellow onions 2 Cups of dry rice
  • 2 Cups of dry black beans
  • 4 Diced cloves of garlic (More is ok too!)
  • 1 Large diced sweet potato
  • 1-2 Tablespoons of salt to taste. 1 is fine, 2 is nice and salty but not too salty.
  • 4 Tablespoons of canola oil (optional)
  • 2 Tablespoons of smoked paprika
  • 2 Tablespoons of Fresh Yellow Curry powder
  • A small sprinkle of red chili flakes, more if you like SPICY!

Mix all of this together well then add enough water to cover everything by about 12” Usually between 6-8 cups of water depending on how large your veggies were.

Set the instant pot to manual, high pressure, and put it at 28 minutes. When it’s done let it naturally release the steam for another 5-10 minutes.
