Lentil Rogan Josh Recipe

  • 1 cup green or brown lentils
  • 1 bay leaf
  • 4 cups water (or veggie broth for more flavor)
  • 1 onion diced
  • 1 Tbsp fresh grated ginger (or 1 tsp. dried)
  • 1 large can diced tomatoes (28 oz.)
  • 1 cup frozen peas
  • 1 Tbsp oil (I use olive oil)
  • 2 tsp. amchoor powder (dried mango powder buy at an Indian grocery store or sub 1-2 Tbsp lemon juice)
  • 2 Tbsp Rogan Josh seasoning (buy at an Indian grocery store or make your own with recipe below)

Rice to serve alongside (any style you like brown, basmati etc…)

If you’re cooking brown rice get it started right away. If you’re using basmati, start it after you begin cooking the lentils.

Combine lentils, bay leaf and water in a pot to boil. Cook until the lentils are al dente typically 20-25 min (check your bag for cooking instructions). After 20 min., check every couple minutes to be sure not to overcook them. Lentils turn to mush easily. Drain when done (if using veggie broth, you can strain into a bowl to use again in the future). Discard bay leaf.

Meanwhile, dice the onion, grate the ginger. Heat 1 Tbsp. oil in large frying pan or wok over medium high. Add in the onions. Cook for about 5 min. until soft. Add it Rogan Josh seasoning and grated ginger. Cook 1 min. Add in can of tomatoes. Cook for 2-3 min. Stir in lentils, cook 5 min. Stir in amchoor powder or lemon juice and frozen peas. Cook for 1-2 minutes until peas are no longer frozen. Enjoy over rice.

Rogan Josh Seasoning- Mix all and store in a small Mason jar.

1 Tbsp. chili powder

1 tsp. cloves

1 Tbsp. + 1 tsp. cinnamon

34 tsp. ginger

2 Tbsp. + 2 tsp. cumin

4 Tbsp. paprika

2 Tbsp. + 2 tsp. coriander

1 tsp. cayenne

1 Tbsp. + 1 tsp. salt
